1 15 ounce can coconut milk 2 large bananas 3 tablespoons honey 1 teaspoon vanilla extract 1 tablespoon shredded coconut
1. Combine 1/2 cup coconut milk, bananas, 2 tablespoons honey, and 1/2 teaspoon vanilla extract in a food processor. Blend until smooth and creamy. Whisk together remaining coconut milk, honey, vanilla extract, and shredded coconut in a separate bowl. Divide banana mixture among popsicle molds. Layer coconut mixture on top. Freeze for at least 6 hours or until fully frozen. Dip molds in warm water for several seconds before removing popsicles.
