Crispy baked eggplant parmesan layered with sauce and cheese.

Ingredients

2 eggplants

2 cups marinara sauce

2 cups mozzarella cheese

1/2 cup parmesan cheese

1 cup breadcrumbs

2 eggs

1/2 cup flour

Salt and pepper

Instructions

1. Slice eggplant

2. Salt and rest

3. Pat dry

4. Bread slices

5. Bake until golden

6. Layer with sauce and cheese

7. Bake again until bubbly

8. Serve warm

Use thick sauce
