Fresh avocado corn salad with tomatoes, cilantro, lime juice, and sweet corn for an easy summer side dish.
1 pound cherry tomatoes
3 ears cooked corn
2 avocados
1/2 red onion
1/4 cup cilantro chopped
2 tablespoons olive oil
2 to 3 tablespoons lime juice
2 garlic cloves minced
1 teaspoon sea salt
1/8 teaspoon black pepper
1. Slice tomatoes and red onion
2. Cut corn kernels from cob
3. Slice avocados carefully
4. Combine tomatoes corn avocado onion and cilantro in bowl
5. Add garlic olive oil and lime juice
6. Season with salt and pepper
7. Toss gently until combined
8. Serve immediately and enjoy
Use ripe but firm avocados
Add avocado shortly before serving
Grilled corn adds extra flavor
