Crunchy asian chicken salad with cabbage, chicken, noodles, and sesame dressing.
2 tbsp light soy sauce
3 tbsp rice vinegar
1 tbsp toasted sesame oil
2 tbsp grapeseed oil
1 tsp sugar
1½ tsp ginger
1 garlic clove
½ tsp black pepper
4 cups Chinese cabbage
1½ cups red cabbage
1 cup carrots
2 cups shredded chicken
½ cup scallions
1 cup crunchy noodles
1 tsp sesame seeds
1. Combine dressing ingredients in a jar.
2. Allow dressing to rest for 10 minutes.
3. Place vegetables and chicken in a bowl.
4. Add half the crunchy noodles.
5. Pour dressing over the salad.
6. Toss gently.
7. Divide into bowls.
8. Top with remaining noodles and sesame seeds.
9. Serve immediately.
Store dressing separately for meal prep.
Add crunchy noodles just before serving.
