2 medium zucchini, cut into fries

1/2 cup grated parmesan cheese

1/2 cup panko breadcrumbs

1/2 tsp garlic powder

1/2 tsp paprika

1/4 tsp black pepper

1/4 tsp salt

2 large eggs, beaten

Olive oil spray

Instructions

1. Wash and dry the zucchini, then cut into even fry-shaped sticks.

2. Preheat the air fryer to 400°F.

3. In a bowl, mix parmesan, panko, garlic powder, paprika, salt, and pepper.

4. Dip zucchini fries into beaten eggs, then coat evenly in the breadcrumb mixture.

5. Lightly spray the air fryer basket with olive oil.

6. Arrange zucchini fries in a single layer without overcrowding.

7. Spray the tops lightly with olive oil.

8. Air fry for 10–12 minutes, flipping halfway, until golden and crispy.

9. Serve immediately with your favorite dipping sauce.
