This air fryer pineapple cake is soft, moist, and packed with juicy pineapple flavor. Made with simple pantry ingredients and baked perfectly in the air fryer, it’s an easy dessert that doesn’t require turning on the oven.

Ingredients

225 g self-raising flour

100 g butter, softened

100 g caster sugar

200 g fresh pineapple, chopped into small chunks

100 ml pineapple juice

50 g dark chocolate, finely grated

1 medium egg

2 tablespoons whole milk

Instructions

1. Preheat the air fryer to 200°C (390°F) and grease a small air-fryer-safe cake tin.

2. Add the butter and self-raising flour to a bowl and rub together until the mixture resembles breadcrumbs.

3. Stir in the caster sugar, then fold in the pineapple chunks, pineapple juice, and grated dark chocolate.

4. In a separate jug, whisk together the egg and milk.

5. Gradually mix the liquid ingredients into the dry mixture until a soft cake batter forms.

6. Pour the batter into the prepared cake tin and smooth the top.

7. Place the tin into the air fryer basket and cook at 200°C for 40 minutes.

8. Check doneness with a toothpick; it should come out mostly clean.

9. Remove from the air fryer and allow the cake to rest for 10 minutes before slicing and serving.

Notes

Pan size: Use a 6–7 inch cake tin for best results.

Browning tip: If the top browns too quickly, loosely cover with foil.

Storage: Store leftovers in an airtight container for up to 3 days.

Freezing: This air fryer pineapple cake freezes well for up to 2 months.
