1/2 cup breadcrumbs
1/4 cup parmesan cheese
2 eggs
1/4 cup flour
1 cup marinara sauce
8 mozzarella slices

1. Prepare breading stations
2. Coat eggplant slices
3. Preheat air fryer to 370°F
4. Cook 8-10 minutes then flip
5. Cook 4-6 more minutes
6. Add sauce and cheese
7. Cook 2 minutes more
Do not overcrowd air fryer
Use panko for extra crunch
