This air fryer Christmas cake is moist, spiced, and festive. It’s quick to bake and perfect for a small holiday treat, with warm spices, dried fruit, and a tender crumb.

Ingredients

1 cup all-purpose flour

1/2 cup light brown sugar

1/4 cup softened butter

2 large eggs

1/4 cup milk (or milk alternative)

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp allspice

1/4 tsp salt

1/2 cup mixed dried fruit

Optional: 1 tbsp orange zest

Optional: 1/4 cup chopped nuts

Instructions

1. Preheat the air fryer to 320°F (160°C) for 3–5 minutes.

2. Grease a 6–7 inch cake pan or line with parchment that does not rise above the pan walls.

3. In a bowl, mix flour, brown sugar, baking powder, spices, and salt.

4. In another bowl, cream the softened butter with the sugar, then whisk in the eggs and milk until smooth.

5. Fold the wet mixture into the dry ingredients until just combined. Stir in dried fruit, nuts, or zest if using.

6. Pour the batter into the prepared pan, filling no more than two-thirds full.

7. Place the pan in the air fryer and bake at 320°F (160°C) for 25–35 minutes.

8. Check doneness at 20 minutes by inserting a toothpick into the center; continue baking until it comes out clean.

9. If the top browns too quickly, cover loosely with foil and continue baking.

10. Cool for 10 minutes, then remove from the pan and cool fully on a rack before slicing.
