A quick and crispy air fryer chicken quesadilla that you can prepare in about 15 minutes — cheesy, flavorful, and ideal for busy weeknights.
2 flour tortillas (8-inch)
~1 cup cooked shredded chicken
~1 cup shredded cheese (Monterey Jack or cheddar blend)
Oil spray (or light brush of oil)
Optional: avocado slices, jalapeño slices
1. Pre-heat your air fryer to 350°F (177°C).
2. Lay one tortilla flat and layer half the shredded cheese, then the cooked chicken, then remaining cheese.
3. Top with avocado or jalapeño if desired, then place the second tortilla on top.
4. Lightly spray or brush the top with oil and place in the air fryer basket.
5. Cook for 8-10 minutes, flipping halfway, or until golden and cheese is melted.
6. Let rest for 1 minute, then slice into wedges and serve with guacamole or sour cream.
Use leftover or rotisserie chicken to save time.
For softer tortillas, wrap the assembled quesadilla in foil before cooking.
Reheat leftovers in the air fryer at 350°F for 3-5 minutes to restore crispiness.
