Fluffy, quick-to-make blueberry muffins baked right in your air fryer—perfect for a grab-and-go breakfast or snack.

Ingredients

1 cup self-rising flour

2 ½ tablespoons white sugar

¼ teaspoon ground cinnamon

⅓ cup milk

3 tablespoons melted butter

1 large egg

2 teaspoons vanilla extract

½ cup fresh blueberries

Instructions

1. Preheat the air fryer to 340 °F (170 °C) for 5 minutes.

2. Combine flour, sugar and cinnamon in a mixing bowl.

3. In another bowl whisk milk, melted butter, egg and vanilla; pour into dry mixture and stir until just combined.

4. Gently fold in blueberries and scoop batter into liners filling each ¾ full.

5. Place liners into the air fryer basket and cook for 14 minutes or until a toothpick comes out clean.

6. Let muffins cool slightly before serving.

Notes

Support paper liners with a ramekin if using to bake in the air fryer.

Fresh or frozen blueberries work—coat them lightly in flour to prevent sinking.

Store cooled muffins in an airtight container for up to 3 days or freeze for longer storage.
