This Air Fryer Basque Cheesecake is smooth, creamy, and features a caramelized top. It’s quick to make and perfectly portioned.
16 oz. cream cheese, room temperature
1/2 cup granulated sugar
3 Tbsp. light brown sugar
3 large eggs, room temperature
1 cup heavy whipping cream
1 Tbsp. fresh lemon juice
1/2 tsp. kosher salt
1/2 tsp. vanilla extract
2 Tbsp. all-purpose flour
1. Preheat air fryer to 375°F.
2. Line a 6-inch springform pan with parchment paper.
3. Beat cream cheese and sugars until smooth.
4. Add eggs one at a time, mixing gently.
5. Mix in cream, lemon juice, salt, and vanilla.
6. Sprinkle in flour, mix briefly.
7. Strain batter into a clean bowl.
8. Pour into pan and place in air fryer.
9. Bake for 28 minutes. Add 4-6 minutes if needed.
10. Cool for 1 hour. Chill in fridge for 4 hours.
11. Serve with cream or fruit.
Use a 6-inch pan and soft cream cheese.
Strain batter for ultra-smooth texture.
Top should be very brown but not burned.
