5 large eggs
⅓ cup cottage cheese
½ tsp salt
¼ tsp black pepper
¼ cup feta or cheddar
¼ cup chopped spinach
3 tbsp minced onion
Optional: crumbled bacon
1. Blend eggs, cottage cheese, salt, and pepper until smooth.
2. Portion cheese, spinach, onion, and bacon into 6–8 silicone cups in air fryer basket.
3. Pour egg mixture into cups ~¾ full; stir mixt-ins.
4. Air fry at 290°F for 12–15 minutes until puffed and set.
Refrigerate up to 5 days or freeze for 2 months. Reheat in microwave (20–30s) or air fryer (350°F, 2–3min). Customize with extra veggies, cheese, or protein.
